Green teas are those that have not been allowed to oxidize before cooking. They are heated - either by steaming or pan firing the leaves - soon after they are picked, which is what keeps them green. This process also brings out those classic green tea notes which range from really vegetal & grassy to buttery & nutty w/ hints of alfalfa, persimmmon & hay.
Green tea can have a strong or delicate flavor, but all good green tea should have a complexity of freshness, vibrancy, potency and positive uplifting energy. Just plain youthful, fresh & healthy.
